Roast Chickpeas
Roasted chickpeas go with any and every meal and are perfect as a little snack when I'm working as they are super healthy and soo satisfying. They little balls of deliciousness and can be coated in whatever spices you wish. You can toss these into a salad or sprinkle them over soups for an extra shot of flavour.
My favourite flavour has to be salty smoked chickpeas, which I am sharing with you here. Hope you like them!
Ingredients:
1 tbsp olive oil
1 tin drained (not rinsed chickpeas - save the liquid for meringues!)
2 tbsp smoked paprika
1/2 tsp oregano
1/2 tsp basil
1 tsp salt
pepper
Method:
Set the oven to 200 C
Drizzle the chickpeas with the olive oil and spread evenly on a baking tray. Mix together the spices and toss through the chickpeas.
Bake in the oven for 30 minutes or until crisp, shaking the tray halfway through. Serve immediately or leave to cool and store in an airtight container
