One Pot Tomato Pasta

Serves 4

Another simple recipe, perfect for lunches or a quick midweek dinner. A herby tomato sauce with peppers and spinach. Try topping off with my 'Italian-style' sausages for an extra shot of flavour.




Ingredients
1 tbsp. Vegetable oil
1 Onion
3 Garlic cloves
2 tsp Basil
2 tsp Oregano
2 tsp Paprika
2 Peppers (Red and Yellow work best here)
2 tbsp. Red wine vinegar
2 tbsp. Tomato puree
1 tin Chopped tomatoes
2 tin portions of Pasta (measured using the tomato tin)
1 stock cube
3 big handfuls Baby spinach
salt and pepper

Optional additions:
Sundried tomato
Olives
Extra veggies 😁

Method:
Heat the oil in a pan over a medium heat. Sauté the diced onion and chopped garlic. Season with salt and pepper. Once softened, add the basil, oregano, paprika and chopped peppers and cook until browning.

Next add the red wine vinegar and tomato puree. Once the red wine vinegar has cooked out (it will stop smelling so vinger-y) add the chopped tomatoes, stock and pasta. Cook for around 15 minutes or until the pasta is cooked. Wilt in the spinach before serving.

Simple.
